Steamed Halibut

Recipe Ingredients

1/2 pound carrots, peeled and julienned
1/4 pound snow peas, cut into 1/4-inch strips
8 scallions, halved, then cut into slices lengthwise
1 1/2 pounds halibut steaks
Salt and ground pepper to taste
6 tbsp butter, melted
2 tsp fresh thyme, or 1 tsp dry
Lemon wedges

Cooking Procedures

Bring some water to a boil in a pan or steamer with a rack and lid. Layer the carrots, snow peas, and scallions evenly on the rack. Place the halibut steaks, in a single layer, on top of the vegetables.
Sprinkle with salt and pepper. cover and steam for about 7 minutes, or until fish is opaque and flakes easily with a fork. While the fish is cooking, mix the butter and thyme together and set aside.
When done, transfer the vegetables and fish to a warmed platter or serving dishes and pour the butter-thyme mixture over.
Garnish with the lemon wedges.
