Hammin' Up The Waldorf

Recipe Ingredients

1/2 cup light mayonnaise
1/2 cup orange juice
2 cups diced cooked ham
2 Red Delicious apples, cored and diced
2 Golden Delicious apples, cored and diced
1/2 cup thinly sliced celery
1 tablespoon chopped fresh parsley

Cooking Procedures

In a large bowl, whisk together the mayonnaise and orange juice. Add ham, red apples, yellow apples and celery and toss until thoroughly coated, to ensure that the apples do not brown. Chill 4 hours or overnight.
Just before serving, toss in parsley. Serve on a bed of lettuce. NOTE: You may also add 1/2 cup halved seedless grapes, raisins, sunflower seeds or walnut halves.

Excerpt from the wayback cook-book collection:

a. Bring to boiling point, then add a tablespoon of salt. Simmer two hours. Add the Worcestershire, Tabasco and paprika and more salt if needed. Let this simmer again one hour or until the beans are soft. Then in a small frying pan heat the olive oil until hot, add six tablespoons of the beans with their juice, and with a large spoon or fork crush and mix the beans with the oil. Let this cook for five minutes. Then add it to the rest of the beans. Stir well and serve with rice. SAVORY B
