Pasta with Crab and Wild Mushrooms

Recipe Ingredients

1 8-ounce bottle clam juice
1/2 tsp saffron threads
3 tbsp butter
7 to 8 ounces fresh shiitake mushrooms, stemmed, sliced
1 bunch green onions, thinly sliced
1 tbsp tomato paste
8 ounces crab meat, cut into bite-size pieces
2 tsp minced fresh tarragon or 3/4 tsp dried, crumbled
8 ounces linguine pasta

Cooking Procedures

Combine clam juice and saffron threads in small bowl. Melt butter in heavy medium skillet over medium heat. Add mushrooms, sprinkle with salt and pepper and cook until beginning to soften, about 3 minutes. Add half of green onions and 1 tablespoon tomato paste and stir to blend. Add clam juice mixture and simmer 2 minutes. Add crab and tarragon and stir until heated through. Season with salt and pepper.
Meanwhile, cook linguine in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well.
Return pasta to same pot. Add sauce and toss to coat. Divide pasta between 2 plates. Sprinkle with remaining green onions and serve.

Half and half corn flakes and rolled oats may be used if preferred. Makes 21/2 dozen. GROUND ROLLED OAT COOKIES 1/2 cups oat meal, ground. 1 tblsp. shortening. 1/2 tblsp. rice flour. y> tsp. baking powder. 1/2 cup honey or syrup. % tsP- salt- 1 egg. Combine the shortening, honey, and beaten egg. Stir in the other ingredients. Drop from a teaspoon on a greased pan and bake in a moderate oven about fifteen minutes. Chopped nuts may be added if desired. Makes 2 dozen. OATMEAL MACAROO
