Coconut Pie

Recipe Ingredients

3 beaten eggs
1 1/2 cup of sugar
1/2 cup of butter or margarine, melted
4 tsp of lemon juice
1 tsp of vanilla
One 3 1/2 ounce can (1 1/3 cup of) flaked coconut
One unbaked 9 inch pastry shell

Cooking Procedures

Combine the eggs, juice, butter or margarine, lemon juice and vanilla. Stir in the coconut.
Pour the filling into shell, unbaked pastry shell.
Bake in moderate oven 350 degrees F. for 40 to 45 minutes but no more. Cool well before serving.
