Recipe Ingredients

3 large potatoes, peeled and cubed
1 medium onion, chopped
1 tsp minced or chopped garlic
3 tbs chopped green pepper
1/4 cup butter or margarine
2 1/2 tbs all purpose flour
2 cups milk
1/3 cup shredded sharp Cheddar cheese
1/2 tsp salt (or to taste)
1/4 tsp ground black pepper
3 tbs chopped pimiento

Cooking Procedures

Cook potatoes in boiling water to cover 15 to 20 minutes or until tender. Drain and set aside. Saut� onion, garlic, and green pepper in butter until tender; add flour, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Add cheese, salt and pepper; stir until cheese melts. Stir in potatoes and pimiento. Spoon mixture into a lightly greased 1 1/2 quart casserole. Bake, uncovered, at 350� F. for 30 minutes or until bubbly.
