Recipe Ingredients6 large hard cooked eggs3 tbs sweet pickle relish 2 tbs finely chopped green onions 1 tbs diced pimiento, undrained 1/2 cup cooked mashed potatoes 3 tbs mayonnaise 1 tbs creamy mustard 1/2 tsp salt (optional) 1/4 tsp ground black pepper 2 tsp curry powder (optional) Cooking ProceduresRemove yolks from eggs; discard or reserve for another use. Chop egg whites. Combine egg white, pickle relish, green onions, and pimiento; set aside. Combine mashed potatoes and next 4 ingredients; stir in curry powder, if desired. Fold into egg mixture. Serve as a salad over lettuce, a sandwich filling, or a stuffing for vegetables. |
